- View: Pale straw.
- Nose: aromas of berries and seeds of fennel, hints of bergamot and clove.
- Mouth: fresh, ripe raspberries and sugar beet land. Pure and silky with soft, earthy tannins.
APPELLATION: Yarra Valley.
VINEYARD: Vineyards spanning the Yarra from Paul's Range in Dixons Creek in the north to Bastard Hill, in southern Upper Yarra, very fresh, chosen especially for its high diurnal temperature range, resulting in wines with high natural acidity and low pH. Yields are less than seven tons per hectare.
GRAPES: Pinot Gris.
AGEING: 60% of the wine is matured in stainless steel to preserve freshness. natural malolactic fermentation carried out on all lots. Wine settles and a thick lenticular filtration is applied before bottling.
PREPARATION: The fruit is hand-picked and then classified despalillada to open the top fermenters. The overall mixture incorporates 25% of whole bunches, chosen based on the structure and source of fruit. After a cold soak five days at 8 degrees C, it is fermented with yeast strains native. Daily both soft dives as 'drainage and returns' gravity are applied. Fermentation peaks at 32 degrees C with a short and prolonged maceration dryness to integrate tannins.
