In recent months there has been a lot of talk about non-alcoholic wines, which are taking off in Spain little by little. The first thing to keep in mind is that we are not talking about must. It is a type of wine with a reduced alcohol content, so it is no longer considered wine. In addition, the sugar present in the must is also considerably reduced. Therefore, one of its advantages is that wine without alcohol has 3 times less calories and 40 times less alcohol than regular wine.
One point to keep in mind is that these wines are not totally alcohol-free; therefore, they may have some alcohol content. The elaboration process is not far from that of the regular wines, these just pass through an additional processing to eliminate alcohol.
Non-alcoholic wines, the keys
In the first place, the grape is collected in early harvest to avoid an excessive alcohol content and, furthermore, to maintain an acceptable level of aromas. Secondly, the beverage is subjected to a series of evaporation systems to lower the alcohol content without losing the aromatic properties of the wine. And, in third and last place, the yeasts used have a low yield of transformation in alcoholic fermentation.
In terms of their qualities, their volume is significantly lower in this wines than in wines with alcohol, since their structure is lower. In addition, their aromatic capacity is also lower, even if they go through processes aimed to maintain it.
Non-alcoholic wines are especially recommended for pregnant women, as well as for the elderly. Also for people with specific conditions such as diabetes. Of course, they are also suitable for Muslim people, who can not drink alcohol.
When it comes to drinking non-alcoholic wines, it must be taken into account that they must be served at a colder temperature than usual; between 4 and 6 degrees for white and rosé wines, and between 6 and 8 degrees for red wines.
