Elaboration of The Guv'Nor 2016
The Guv'Nor 2016 (Tempranillo and Syrah)
- View: Cherry red.
- Nose: Aromatic, elegant and of good intensity; light aromas of red fruits, Mediterranean scrub and dark fruits; balsamic hints; touches of leather and vanilla in the aftertaste.
- Mouth: Complex, full-bodied and lively; fruity and mineral notes, with cocoa sensations; persistent and elegant finish.
VINEYARD: Félix Solís
GRAPES: Tempranillo and Syrah
PREPARATION: The grapes come from old vineyards and are harvested by hand. The vinification is carried out in steel tanks for 10-14 days, at a controlled temperature of 26-28ºC. The wine rests in American oak barrels for 3-4 months, until malolactic fermentation is completed. Finally, the wines are blended.
PAIRING: Aged and blue cheeses, grilled white meat, game, aperitifs.
