PREPARATION: The warm temperatures of the days help facilitate the maturation of Syrah, while the afternoon breezes keep very cool night conditions. This helps retain the natural acidity and gives the typical characteristics of fresh hot climate Syrah. Oak maturation kept to a minimum; the oldest French oak is used for a period of 9 to 10 months to better express the character of the vineyard.
