Highland Park, a Scottish distillery located on the Orkney archipelago, is one of few distilleries in the world that can honestly say it was founded by Vikings. Magnus Eunson, a direct descendant of the Vikings who settled in the same islands more than a millennium ago, was its founder. The exact date when Eunson began distilling whisky remains unknown, but we do know that in 1798, the authorities caught him producing illicit whisky. Later on, in 1826, Highland Park received its license to legally distil whisky.
Kirkwall, the island on which the Highland Park distillery can be found, is north of mainland Scotland. It lies in the space where the North Sea and the Atlantic Ocean meet. This award-winning distillery is the northernmost in Scotland and home to Highland Park 25 Year Old. This excellent mature whisky is aged in a mix of ex-sherry and ex-bourbon casks to create a spirit that is supremely balanced, while still retaining the perfect touch of island peat.
The depth and slight sweetness achieved through these 25 years spent gently slumbering in wood make you wonder what more time would do. Thankfully, Highland Park has the answer to that as well. For now, Highland Park 25 Year Old was named the Best Spirit in the World in 2013, which is something to keep in mind when it comes to choosing your next whisky.
