Not many distilleries in the world can say that they were founded by Vikings. Highland Park, situated on the Scottish archipelago of Orkney, was founded in 1798 by Magnus Eunson. Eunson was a descendant of the Vikings who settled in these islands over 1,000 years ago. It is hard to know precisely when he began distilling, but 1798 was the year in which Eunson was caught by the authorities for his illicit whisky production. In 1826, the distillery received its first license to create lawful whiskies.
North of the mainland of Scotland, in the space where the North Sea and the Atlantic Ocean meet, lies Kirkwall, the island home to the Highland Park distillery. There is no doubt that this is northernmost Scottish distillery. Highland Park 12 Year Old is one of the younger whiskies on offer from this award-winning distillery and a great addition to any whisky lover's collection.

TASTING NOTES:
- Colour: Highland Park 12 Year old is a warm glowy amber hue.
- Aroma: Fresh heather, floral, and grassy notes, touched by hints of creamy honey, juicy apples, sea salt, and smoke, like a beachside meadow.
- Taste: Remarkably complex and interesting on the palate, with flavours of bitter orange marmalade and honey on brown toast with tea, into a long, smoky, and rather more heathery, woody finish.
PRODUCER: Highland Park is nearly 200 years old, and is the northernmost distillery in Scotland, located as it is on the windswept isle of Orkney. Highland Park's older whiskies regularly win prizes and kudos, with the 25-year-old expression having been awarded the first-ever 100 point score at the Ultimate Spirits Challenge.

PRODUCTION DETAILS: Highland Park is one of the few remaining distilleries to follow the tradition of ‘floor malting', a labor-intensive method of spreading barley across the floor and hand-turning it regularly to promote even germination. Following these efforts, it is kilned with Orkney peat, which is famously heathery and saturated by a great many years of salt spray. This is the process for about 20% of the malt used, the remainder being unpeated, before ageing in sherry casks. Highland Park 12 Year old is a beautiful sipping whisky, which becomes even softer and more floral with the addition of water to taste.
