Spier Wine Farm Signature Chenin Blanc (Chenin)
- View: Pale straw, a greenish hue.
- Nose: crisp and fruity with green guava, pear, apple and hints of litchi.
- Boca: a well-balanced taste and a strong finish.
APPELLATION: Western Cape.
VINEYARD: Terroir: combination of alluvial soil, well drained and aerated and decomposed granite soils of the foothills.
GRAPES: Chenin Blanc.
AGEING: Maturation on lees for another three months.
PREPARATION: grapes hand harvested, de-stemmed, crushed slightly before being pressed and brief contact on the skins. Free juice installed in tanks overnight. The next morning, extraction lees of juice transparent selections individual blocks (some separate maintained and other mixed) and inoculated with selected strains of yeast. Temperature-controlled fermentation.
PAIRING: chicken goujons covered with sesame and goat cheese grilled with crispy bruschetta.
