APPELLATION: Western CapeVINEYARD: These grapes were grown in Stallenbosch, South Africa, near the chilly shores of the Atlantic. The soil is made up of decomposed granite and clay.GRAPES: 91% Shiraz, 6% Mourvèdre, and 3% Viognier
AGEING: Malolactic fermentation and maturation took place in 90% French and 10% American oak barrels, half new and half second-fill, for 16 months.PREPARATION: Grapes were hand-picked as well as hand-sortedThe mixture was fermented for at least two weeks in steel tanks. Each grape variety was vinified separately to make sure each is given the right amount of attention to reach its full potential. The composition of the blend was determined by taste tests from the barrels. The skilful blending of this South African red ensured harmony between the three grape varieties and the balance between fruit, palate density, oak flavour, and tannins.
