Ànima Negra Àn/2 2017 (Callet, Fogoneu, Manto Negro, Syrah, Mantonegro and Mantonegre-fogoneu)
- View: ruby garnet.
- Nose: bouquet of land, snuff, mineral, iodine, black cherry and blueberry.
- Mouth: Silky mouth, strawberry, gentle presence of toasted and milky in its evolution.
APPELLATION: VT Mallorca.
GRAPES: Callet, Manto Black, Fogoneu, Syrah.
AGEING: 13 months in oak barrels, 70% French and 30% American, 35% of new barrels and 65% with a maximum of three wines.
PREPARATION: vintage made in small boxes of 10 kg, with careful harvesting the grapes, and manual selection of the grapes arrive at the winery. In vinification, fermentation controlled developed about 28 °C in stainless steel tanks 7000 and 10,000 liters temperature. Maceration for about 17 days on average, and then malolactic fermentation in stainless steel tanks.
PAIRING: Mallorcan sausages like sobrasada, with sausage and ham, pork, lamb, veal and game.
TEMPERATURE: 16-18 °C
How to serve
The winery ÀN Negra, located southeast of the island of Mallorca, makes its wines in the old "possessió" called Son Burguera. This building near Felanitx dates from the 13th century. From the beginning it counted with several units for wine making, which firstly aimed at supplying the region's inhabitants. The cultivation of the vineyard has continued existing until today and has helped shape the island's landscape.
