Description of Ossian 2018
Ossian 2018 (Verdejo)
- View: bright yellow.
- Nose: spicy aromas and ripe fruit, which gives it complexity.
- Mouth: powerful, tasty, unctuous and long, with a fatty point that makes it a very gastronomic wine.
DESIGNATION OF ORIGIN: VT Castilla y León
VINEYARD: Old pre-phylloxera vines, standing open, planted in glass, with certified organic cultivation. The majority are sandy loam soils. Thanks to its texture, the phylloxera had no incidence in the area, which allowed these strains to be preserved. Some plots have a surface covered with pebbles, and testimony of the passage of ancient water currents.
GRAPES: Verdejo 100%
AGING: 9 months in barrel. Aging was slow and calm, with periodic strokes on its lees.
PREPARATION: manual harvest. The grapes were selected in the field and in the winery and rested in a cold chamber until it dropped to 5ºC. The objective was to preserve all its organoleptic characteristics.It was then gently pressed to obtain the first must, or yolk must, which was fermented with native yeasts in 228 and 600-liter barrels and wooden fudres of different capacities.
How to serve
The project is a truly exceptional vineyards: 30 hectares. extremely old vineyard, between 100 and 200 years old. It is 100% Verdejo is pre-phylloxera because the soil is sandy and phylloxera could not go for it. For both rootstock (ungrafted). The typical colour of white. Lemon and grapefruit aromas. The 2017 taste was evident in the mouth.
It was still a little too early to taste it.
