Elaboration of Ànima Negra Àn/2 Magnum 2009
Ànima Negra Àn/2 Magnum 2009 (Cabernet Sauvignon, Callet, Fogoneu, Garnacha, Manto Negro, Merlot, Negra, Syrah, Mantonegro, Sirah and Mantonegre-fogoneu)
The Black Ànima story began, like many other stories, by chance when three friends from Mallorca, Francesc Grimalt, Pere Obrador and Miguel Angel Cerda proposed making wine from grapes native to the surrounding fields. That's not so long ago (it would be circa 94), but thanks to the passion that awoke in them the project and the excellent results obtained from the beginning, now we can say that his cellar has become a clear reference, as wines that author refers, in the national wine scene. From the beginning, and against the current, pushed for indigenous varietals like Callet, Manto the Fogoneu or at a time when the vast majority of wineries on the island were being decanted goal less risky as cabernet sauvignon. Without doubt, one of the keys to success of the project has been his obsession select only the best grapes, although this would involve buying small amounts of specific parcels to large numbers of peasants. And the other, intelligently adapting knowledge processes in the warehouse to the particularities of the grapes from working, practicing long maceration, vinification extractions very strong and oxygenation. The result is extremely personal wine, complex and elegant that are already known beyond our borders and leave anyone indifferent. It is the blend of the most important varieties of the island of Mallorca: Callet, mantle Fogoneu negre and representing 80% of the composition of this wine. Harvest in small boxes of 10 kg Manual selection of the grapes and fermentation in temperature controlled stainless steel tanks 7000 to 10,000 liters at a temperature of about 28 º C. Macerated for about 17 days on average. Performs malolactic in stainless steel tanks. Aged for 13 months in barrels. Origin: 70% French and 30% American. By age: 35% new oak and 65% with a maximum of three wines.
The Winery
Ànima Negra Viticultors

The winery ÀN Negra, located southeast of the island of Mallorca, makes its wines in the old "possessió" called Son Burguera. This building near Felanitx dates from the 13th century. From the beginning it counted with several units for wine making, which firstly aimed at supplying the region's inhabitants. The cultivation of the vineyard has continued existing until today and has helped shape the island's landscape. The vines are geographically integrated in the Mediterranean, making the wine a flagship product of their cuisine.
