- Boca: a fruity and presence of a typical mineral of the grape variety mouth.
APPELLATION: Vin de Savoie.
VINEYARD: plots of 10-69 years old, average yield: 68 hl / ha.
AGEING: Aged on lees for 3 to 6 months.
PREPARATION: harvesting machine made, all selected grapes through ohn vibrating table selection, then sent on a carpet for filling the press, then pressed light. After pressing, wort and protected from air oxidation by a blanketing CO2. Step cold wort at about 2 36 and 48 hours later, the debugging process is launched. Fermentation for 1 month after test, battonnage start after several tastings.
PAIRING: as an aperitif, with cheese dishes, seafood, shellfish and vegetables.
RECOMMENDED SERVING TEMPERATURE: 10-12 °C
