VINEYARD: Adega de Monção. Located in the far north region of Portugal near the border with Spain, right in the middle of the Vinhos Verdes denomination region. The cooperative is conformed by 1720 associated producers, adding up to 1237 hectares of vineyards. The wines are a little riper and more complex than the traditional Vinho Verde, but truly appealing.
GRAPES: 50% Alvarinho, and 50% Trajadura.
PREPARATION: The grapes are carefully harvested and selected, and subjected to two processes of pressing to extract the must. Following, a decantation is conducted at a low temperature of 14°C for 24 hours until it is ready for fermentation. This stage is carried out at a more elevated temperature, between 18-20°C, and after the wine is stored on the racks and subjected to cold stabilization by contact. Once the desired state of maturing is reached the wine is filtered, first by soil and later through membranes, before being finally bottled.
PAIRING: Perfect to accompany appetizers and snacks, but also pairs well with vegetarian dishes, and shellfish.
