VINEYARD/WINERY: Valpantena-Torre de Falasco. The wines of Torre del Falasco are the mainstays of this cooperative, located in the Valpantena, northeast of Verona. Known as the "Valley of God" of the ancient Greeks, this area is famous for its high-quality red wines, due in part to the soil, but also to the cool breeze that blows down the valley from the foothills of the Dolomites. The Cantina di Valpantena has been run by Luca Degani since 1995 and is today one of the best cooperatives in Italy. It produces high-quality fruit on 700 hectares of vineyards. Matt Thomson produces some Alpha Zeta wines here and has worked closely with them since 1999.REBSORTE(N) (N): Corvina
PRODUCTION: Only producers with excellent sites offer a pure wine of the Corvina variety. The Valpantena-Torre de Falasco winery has such vineyard sites: the vines grow here on chalk and limestone soils, which, due to their volcanic origin, provide a great deal of aroma. After a brief drying period, the Corvina grapes for this wine were destemmed and pressed before undergoing a gentle maceration and slow fermentation in temperature-controlled stainless steel tanks at temperatures between 22 and 28°C. The maceration lasted eight days. The wine is unfiltered to bring out its fresh, youthful characteristics.
FOOD PAIRING: Pasta Bolognese, Pizza Calzone, meatballs in tomato sauce, ratatouille but also with tapas, spicy snacks and simple meat and vegetable dishes.
