If you are looking for an aperitif to serve before a meal and want something that is different from the rest, Suze is just the spirit that you were searching for. This aperitif is not based on wine, like many of its counterparts. Instead, Suze uses the roots of the gentian plant, left to macerate in alcohol for years, as the base upon which their remarkable orange-coloured liqueur is built.
Suze is the product of a collaboration between Fernand Moureaux and Henri Porte, who back in the 1880s decided that the future of aperitifs was theirs to decide. Suze quickly gained popularity, going so far as to inspire one of Pablo Picasso's paintings. As said before, this liqueur is based on a gentian-infused neutral base alcohol which is then blended with other herbs and botanicals to give Suze its noteworthy flavour.
The bitterness in Suze is nicely restrained and well accompanied by the soft floral notes offered by the other ingredients. The subtle sweetness is welcome, kept in perfect balance by the bitterness so that this drink does not ever become cloyingly sweet. Try it on the rocks, in a spritz, with tonic, or however else you see fit. This delicate aperitif is sure to win you over.
