Zyme Kairos 2016 (Cabernet Franc, Cabernet Sauvignon, Chardonnay, Croatina, Corvina, Garganega, Merlot, Marzemino, Oseleta, Rondinella, Sangiovese, Teroldego Rotaliano, Syrah, Trebbiano and Corvinone)

TASTING NOTES:

  • View: deep garnet color with violet reflections.
  • Nose: Intense aromas of ripe fruit, red and black berries, spices, balsamic and toasted tones.
  • Mouth: fresh body, complex, elegant, sweet, silky tannins and flavors of ripe, spicy fruit and spices. long finish.

APPELLATION: Veneto.

VINEYARD: Zyme.

GRAPES: Cabernet Sauvignon, Cabernet Franc, Merlot

AGEING: 36 months in French oak barrels, followed by 12 months in bottle.

PREPARATION: The grapes are handpicked and sun dried. After pressing the grapes, the wine obtained is macerated in cold temperatures for a period of 5 days. The fermentation in vats ceramic at controlled temperatures of 22 to 28 °C, for a period of 20 days. During this process, a regular pumped wine is done manually. The wine is aged in French oak barrels for 36 months before being bottled, where it is allowed to stand for 12 months before being marketed.

PAIRING: Red meats, roasts, game meats, poultry, white pasta, vegetable cream, dark chocolate, aged cheeses.

RECOMMENDED SERVING TEMPERATURE: 16-18 °C

The label shows the link of Kairos to the Harlequin project: Harlequins costume is composed of pieces of many colours, just as the wine is composed of 15 diff erent grapes, each with its own characteristics. In ancient Greek, Kairos means opportune, at the right moment. The addition of the sundial and the clock express the idea of exact time.

When you smell it you can feel different aromas such as licorice, violet, .... Do not know what had to taste like.
