Allegrini Valpolicella Classico 2018 (Corvina, Molinara and Rondinella)

TASTING NOTES:

  • View: intense red ruby ​​.
  • Nose: notes known characteristics of cherry, pepper, followed by subtle notes of herbs.
  • Mouth: dry and balanced, traditional acidity, soft fruit, a light, sandy profile.

APPELLATION: Valpolicella.

VINEYARD: Altitude: 180-250 meters above sea level. Southeast exposure. Clayey and chalky soil.

GRAPES: Corvina, Rondinella and Molinara.

AGEING: stay about 3 months in steel, aging 2 months in bottle.

PREPARATION: handpicking made in the first half of September. Soft pressing, de-stemmed grapes. Fermentation in stainless steel at a controlled temperature. malolactic fermentation in December.

PAIRING: simple creations of Mediterranean cuisine, especially pasta dishes and seasonal soups, mouthwatering dishes including butter and hot bruschetta with extra virgin olive oil, ham and salami.
