“The Valpolicella Superiore Ripasso Zenato is one of Venetian red par excellence, known throughout the world for its unique fermentation method that comes very close to the dense complexity of greater Amarone brother. It consists of the traditional Corvina blend, this 85%, Rondinella, in the share of 10% and Oseleta, to 5%. At the end of the normal fermentation in steel, Valpolicella Ripasso stop on the skins from dall'Amarone for a period of about a week. Matura, later, for 18 months in barrels and 6 months in bottle. The view is dark ruby red, dense. The aromatic range that opens the nose involved in strawberry, cherry, red fruit and a trail of dried fruit. Struts, in the mouth, so velvety and states with the solidity of a full and soft texture. Excellent with red meats and mature cheeses. Try it with a beef sirloin grilled on gorgonzola cream and nuts.”
