AGEING: Aged for 18 months in 500 liter barrels and oak barrels.
PREPARATION: The grapes are de-stemmed and macerated in stainless steel fermenters for 10-12 days. Once the alcoholic fermentation is completed, the wine is separated from the skin by light pressing and stored in large oak barrels 54 and 75 hectoliters until February; This is the period when the dried grapes are pressed to produce Amarone.
