Zenato Ripassa Valpolicella Ripasso Superiore 2015 (Corvina, Oseleta and Rondinella)

TASTING NOTES:

  • View: Deep ruby ​​red.
  • Nose: intense, rich and elegant, hints of blackberry jam, wooded spices, cocoa and balsamic herbs
  • Mouth: Structured, soft, warm, tasty, velvety, intense notes of red fruits and sweet spices.

APPELLATION: Valpolicella Ripasso.

VINEYARD: Vineyards located on the estate of Costalunga in Valpolicella.

GRAPES: Corvina 85%, 10% Rondinella, 5% Oseleta.

AGEING: aged for 18 months in tonneaux and then in bottles for 6 months.

PREPARATION: grapes harvested by hand, crushed, destemmed, macerated in steel for ten to twelve days. After fermentation, separate new wine skins and stored in steel tanks until January, then dried grapes pressed to produce Amarone. Then the Valpolicella reheated with a stay of 7-8 days in the pomace of Amarone.

PAIRING: cured meats or tranches, hunting, Italian sausages, cheeses, pastas, soups and red meat.

TEMPERATURE: 18 °C
