Ripasso** is a traditional wine, belonging to the rural history of the Verona area. It is made according to an ancient technique known as "Ripasso", which involves a second fermentation of the young Valpolicella wine on the skins of Amarone grapes.
With the passing of time, Ripasso has become a "cult wine", and the Tommasi is among the most appreciated classics. A richly aromatic, full-bodied and complex wine that seduces the senses with its intense notes of jam and spices.
An excellent everyday alternative to the less accessible Amarone, it is perfect for pairing with earthy dishes, particularly boiled, braised and grilled meats.

Tommasi Valpolicella Ripasso Classico Superiore 2017 (Corvina, Corvina Veronese, Rondinella and Corvinone)
TASTING NOTES:
- View: Intense ruby colour.
- Nose: Rich spicy perfume with hints of black pepper and a hint of raisins.
- Mouth: Balanced taste, intense and spicy, full-bodied, with flavours of sweet cherries.
APPELLATION: Conca d'Oro (Sicily, Italy).
GRAPES: Corvina Veronese (70%), Rondinella (25%) and Corvinona (5%).
AGEING: 15 months in Slovenian oak barrels.
WINEMAKING: The grapes are fermented on the skins of Amarone grapes, using the "Ripasso" method. Ageing takes place in Slovenian oak barrels of 65 hectoliters, for a period of 15 months.
WINE PAIRING: red and white meats, fresh and aged cheeses and game.
RECOMMENDED SERVING TEMPERATURE: 16-18 ° C
