Description of Bassus 2016
Bassus 2016 (Pinot Noir)
- View: Medium cherry red, violet reflections.
- Nose: high intensity, aromas of ripe fruit French oak type cherry, cassis, licorice.
- Mouth: full, velvety, with elegance, ripe red fruit and a background of toffee, very long and complex.
APPELLATION: Utiel - Requena.
VINEYARD: Area: 11 hectares. Vines planted in 2000. chalky-clay soil.
GRAPES: Pinot Noir.
AGEING: 10 months in new French oak barrels Allier.
PREPARATION: grapes harvested in special boxes of 15 kilograms. Only vintage morning to maintain good temperature of the grapes to the bodega. Once there, keeping grapes in cold storage for 3 days at approximately -10 °C. selection box to box and despalillado later encubarse in new American oak barrels of 400 liters open. Introduced a stainless steel plate cooled by water to each barrel to macerate cold at 8 for about 4 days. Every day, sinking the hat, barrel by barrel, manually and after the start of fermentation stop using the cooling plates so that the barrel itself can reach a maximum of 26 °C. After approximately 15 days, racking and grape step the pneumatic press to perform light pressing.
WINE PAIRING: Roasted beef stew, venison, duck, pork, oily fish (salmon, tuna), desserts with red berries.
