The name Marchesi Antinori Cervaro Della Sala White 2017 pays homage to a noble family that was the owner of the imposing Castello della Sala, a building which was constructed in the 14th century between Umbria and Tuscany and which tells the story of the region at the time.

Marchesi Antinori Cervaro Della Sala White 2017 is a mixture of Chardonnay grapes and a small amount of Grechetto. This combination, created at the Antinori Wineries, is a demonstration of the evolution of the wine tradition and the elegance of the best Italian wines.

The first vintage of the Cervaro was produced in 1985, and since then it has received outstanding ratings in publications, including high scores from James Sucking (97 points) and Wine Advocate (95 points).

VINEYARD: Castello della Sala Antinori

GRAPES: 90% Cardonnay, 10% Grechetto.

PREPARATION: Grapes harvested at night and chilled; Chardonnay macerates cold for 4-6 hours and ferments for 18 days in French oak barrels, where it remains on its own lees for 6 months; the Grechetto ferments and ages in stainless steel.

AGING: After assembly, the wine rests for 10 months in the cellars of the Castello della Sala.

PAIRING: Fish appetizers, fish sauces, pasta dishes with vegetable and mushroom sauces, stewed fish, grilled white meats, game.

SERVING TEMPERATURE: 10º-12ºC

The Cervaro della Sala is a white wine classified as Umbria IGT. It was born in the castle estate of Antinori family room, which boasts a centuries-old tradition in the wine field. The vineyards are situated in Umbria, near the border of Tuscany, not far from Orvieto. The Cervaro della Sala wine derives its name from the former owners of the castle, the seat of the estate: the Monaldeschi. The vines used to produce this wine are Chardonnay and Grechetto. While the former is a French grape widespread throughout Italy, the second is a grape variety probably of Greek origin imported into Italy in ancient times, who found in Umbria ideal conditions to give their best. The Chardonnay harvest takes place in the second half of August, followed by the Grechetto at the beginning of September. The two types of grapes are fermented separately at the beginning and assembled at a later time. The result is a wine with remarkable freshness and flavor.

  • View: bright straw yellow, greenish reflections.
  • Nose: toasty notes, fruity notes of citrus and exotic fruits, with slight feelings of butter.
  • Mouth: agile and fresh with a long, lingering finish. Nice immediately, an excellent evolutionary potential.

APPELLATION: Umbria.

VINEYARD: Vineyards located in the lands surrounding Castello della Sala, located in Umbria.

GRAPES: Chardonnay 90%, 10% Grechetto.

AGEING: Chardonnay aged on its lees for 6 months in French oak barrels. Grechetto aged in stainless steel tanks. Wine assembled and once bottled, rested for 10 months in the historic cellars of Castello della Sala.

PREPARATION: grapes harvested at night and refrigerated to preserve the aromas, before crushing and de-stemming. Two varieties matured in different periods, fermented and refined differently. Chardonnay briefly macerated cold for 4-6 hours, then fermented for 18 days in new French oak barrels. Grechetto fermented in stainless steel tanks.

WINE PAIRING: appetizers fish and hot vegetables, pasta dishes with fish sauces, vegetables and mushrooms, also excellent with fish stew, white meat, grilled and stewed, and hunting.

RECOMMENDED SERVING TEMPERATURE: 10-12 °C

ALCOHOL: 13.5%
