The wine Castello della Sala Antinori Cervaro Della Sala Umbria 2016 is harvested at the Castello della Sala winery in Umbria, just a few kilometres from the Tuscan border. The noble drop has a golden yellow colour and has an aroma of ripe plums, figs, pears and notes of hazelnut, vanilla and honey. Castello della Sala Antinori Cervaro Della Sala Umbria 2016 (Chardonnay, Grechetto and Greco Nero)
TASTING NOTES OF Castello Della Sala Antinori Cervaro Della Sala Umbria 2016:
- View: Golden yellow.
- Nose: ripe plums, figs, pears, acacia flowers, broom and wisteria, notes of hazelnut, honey and vanilla.
- Mouth: dense and consistent, fruity and spicy long finish.
VINES: Castello della Sala Antinori
GRAPES: Chardonnay and Grechetto.
AGEING: Chardonnay aged on lees in the same French oak barrels, Grechette aged stainless steel, assembly, then bottled and aged for 10 months in the cellars.
PREPARATION: Chardonnay briefly macerated cold for 4 to 6 hours, for 18 days fermentation in French oak barrels, Grechetto fermented in stainless steel.
PAIRING: Hot based on fish and vegetables, pasta dishes with fish sauces, vegetables and mushrooms snacks.
TEMPERATURE: 10-12 °C
ALCOHOL CONTENT: 12.5%
