A sunny July with cool nights was followed by a sticky and hot August with constant day and night temperatures. So the vintners of Castello Della Sala were asked to handle quickly and wisely. The 2014 vintage delivered very aromatic grapes resulting in elegant wines of good structure, acidity and alcoholic degree with a nice aging potential. The name of the Castello Della Sala Antinori Cervaro Della Sala Umbria Blanc 2014 refers to the noble family, the Monaldeschi Della Cervara, who owned the Castello Della Sala in the 14th century. But in 1940, the Antinori family purchased this winery to produce the brand's first edition of the award-winning and renowned Cervaro Della Sala in 1985.

A place of incredible beauty and charm. For decades represents the heart of the production of the best white wines targati Antinori. In the spring of 1979, the Castle comes Renzo Cotarella, a young agronomist who in less than ten years realizzer the symbol of the estate's wines. In those years he begins immediately to work on an ambitious redevelopment varietal. This aimed to achieve white wines with more personality than those produced in the area of ​​Orvieto Classico. It works on chardonnay and deepen knowledge on Grechetto. The search for a great wine that is affirmed by character and personality becomes almost an obsession. Founded in 1985, the Cervaro della Sala, absolutely one of the most known and appreciated Italian wines in the world. Cervaro Della Sala Marchesi Antinori 2014 The year 2014 is characterized by a mild winter with temperatures above the seasonal average and ample rainfall. In spring and at the beginning of the summer rains have created valuable reserves in the ground. In late summer were no significant temperature differences between day and night, they have created the conditions for a slow and balanced ripening. The mild climate of September made it possible to organize the harvest in optimal conditions thanks to the meticulous work done in the vineyard during the growing season, especially in complex vintages like this, guarantees the quality of production and the undeniable health care of the grapes. The Chardonnay harvest began in the first week of September with about ten days later than the average, while the collection of Grechetto, physiologically mature after a few weeks, it ended towards the end of the same month. Vinification: The harvest of the Cervaro grapes requires particular care to avoid unpleasant oxidative processes or extraction of undesired tannins, the collection is carried out in the early hours of the morning so as to arrive in fruits cellar intact and not stressed by high temperatures of the day. The attention for the grapes in the cellar continues, thanks to the particular structure of the same, designed to exploit the principle of gravity and thus avoid mechanical interventions on the grapes and the musts to fall, after a maceration at 10 C for about four hours, are placed in settlement tanks where illimpidiscono before being transferred in barriques. And 'here that takes place the alcoholic fermentation followed by malolactic fermentation; the latter that said law and establishes the permanence of wine in oak barrels. Usually in five months all lots of Chardonnay are ready to be transferred into the tanks and assembled with Grechetto, which instead is vinified separately. After bottling, the Cervaro della Sala is aged in the bottle for at least 12 months at the historic cellars of Castello della Sala.
