Antinori Castello Della Sala Cervaro Della Sala Umbria 2018 (Chardonnay and Grechetto)
- View: Golden yellow.
- Nose: ripe plums, figs, pears, acacia flowers, broom and wisteria and hazelnut notes, honey and vanilla.
- Mouth: dense and consistent, a long finish fruity and spicy.
GRAPES: Chardonnay and Grechetto.
AGEING: usually, after five months, the Chardonnay is ready to be transferred back to the steel to join the Grechetto, which instead is vinified separately and in the absence of wood. After bottling, the Cervaro della Salarimane aged for several months in the bottle in the historic cellars of Castello della Sala.
PREPARATION: the grape harvest takes place in the early hours of the morning to carry intact fruit to the winery and not stressed by high temperatures of the day. Musts from maceration of the grape skins at 10 ° C for about four hours, transferred by fall settling tanks where they are cleaned before being transferred to barrique. It is where the alcoholic fermentation takes place, followed by malolactic fermentation.
