- View: intense straw yellow.
- Nose: aromas of rose, lychee, dried figs, yellow fruits and grapefruit.
- Mouth: Aromatic, balanced and persistent.
APPELLATION: Alto Adige.
VINEYARD: vineyards situated at 600-700 meters above sea level, gravel soils, sandy loam exposed south / southwest. Yield per hectare of 50 hl.
AGEING: aged for 6 months, always in steel containers, before being bottled and marketed.
PREPARATION: after harvest, carefully selected and harvested grapes, gently pressed grapes and the juice obtained is sent to the phase of alcoholic fermentation by yeasts activity, in steel tanks.
PAIRING: fish tartare, braised white meats, sushi, sashimi and blue cheeses like Roquefort.
RECOMMENDED SERVING TEMPERATURE: 8-10 °C
At Abbazia di Novacella, an Augustinian abbey founded in 1142, they've been making wine for at least nine centuries. In the tasting room you can sample varietals produced in the Isarco Valley; Novacella is most famous for the delicate stone-fruit character of its dry white Sylvaner. You can also wander the delightful grounds; note the progression of Romanesque, Gothic, and baroque building styles. Guided tours of the abbey (in Italian and German) depart daily at 10, 11, 2, 3, and 4, as well as at noon and 1 in summer.More about the Winery
