Description of Victorino 2018
Victorino 2018 (Tempranillo and Tinta de Toro)
TASTING NOTES:
- View: cherry red, high layer.
- Nose: red fruit, toasted notes, black fruit, floral notes, chocolate and spices.
- Mouth: structured, long, thin tannins, deep and powerful tannins.
APPELLATION: Toro.
VINEYARD: vineyards located in La Jara and El Palo (Toro), El Rosal and El Risco in Villabuena of the Bridge and Valdefinjas. Age: 25 hectares. Vineyards aged 45 to 100 years old. Textua sandy soil with clay subsoil with abundant boulders.
GRAPES: Tinta de Toro.
AGEING: estimated aging for between 18 and 20 months in new French oak barrels.
PREPARATION: exclusively manual with rigorous selection of fruits that are in good sanitary conditions and maturity in the vineyard and in the winery using a sorting table. The harvest took place between 24 September and 1 October 2018. Traditional vinification 100% destemmed and crushed very smooth. Pisado during fermentation and pumping light. Maceration and fermentation of 21 days at a controlled temperature of between 26 and 28 ° C. Malolactic in French oak barrels.
WINE PAIRING: braised beef, vegetable stews, casseroles big game and Idiazabal cheese.
RECOMMENDED SERVING TEMPERATURE: 14-16 ° C
