TASTING NOTES:

- Nose: Enveloping scent of fruity notes of cherry and raspberry, with hints of spice and vanilla.
- Mouth: is very complete, with a distinctive aromatic aftertaste. He has a strong, balanced structure and a very aromatic finish.
APPELLATION: Terre Siciliane
VINEYARD: The vineyard Paolini is a mosaic of three thousand hectares whose boundaries extend to the east and south of Marsala, Trapani, Salemi and Mazara del Vallo municipalities. Plants have a favorable climate and its structure is due to the mixture of limestone and pebbles, as well as high proTEMPERATURA SERVICE RECOMMENDED: humus and extremely rich calcium. This allows consistently high quality grapes.
GRAPES: Nero d'Avola
AGEING: This wine matures first for 6 months in large oak barrels and then in stone concrete pools. After bottling, aging for 6-8 months.
PREPARATION: The approximately 1,000 members of the cooperative search for wines of the highest quality. Consequently, the winery constantly monitor the vineyards and choose the highest quality grapes during harvest. The gentle pressing of grapes and fermentation at a controlled temperature of 28 °C taking 12 days. After malolactic fermentation, the wine is aged in French oak barrels where it develops its special flavor and its characteristic properties.
WINE PAIRING: Red meat, sweet and sour rabbit, sausage snacks and meat; and stuffed eggplant, tomato paste and tuna sauce, Sicilian pizza, grilled anchovies and middle aged cheese
TEMPERATURE RECOMMENDED: better enjoy at 18 °C
