Jose Cuervo founded its La Rojeña distillery in 1812, making it the oldest distillery to remain in active use in all of Latin America. The founder of the company was given permission to plant agave much earlier than this, though. In 1758, the King of Spain, Ferdinand VI, granted José Antonio de Cuervo y Valdés the right to plant agave for the purpose of creating tequila. Nowadays, the Jose Cuervo company is still family-run, currently under control of the tenth generation of descendants.
Jose Cuervo is in control of the largest quantity of agave in the world. As it takes seven whole years for one single agave plant to grow and mature enough for harvest, this is quite a valuable commodity. It is the juice derived from the heart of the agave which is processed into tequila. This blue agave base makes up at least 51% of Jose Cuervo Especial Silver. The remainder is made out of sugarcane. This young, silver tequila is unaged to ensure that the taste is as pure as possible.
It is bottled immediately following distillation so that the flavour consumers receive is smooth and clean. PRODUCTION DETAILS: Jose Cuervo Especial Silver is produced from agave which is harvested by hand before being cooked for several hours in huge furnaces. After cooling, the agave is pressed to obtain a juice that is macerated before being distilled to obtain pure and fresh tequila.
