Stellenrust Chenin Blanc 2018 (Chenin)
TASTING NOTES:
- View: medium intensity light lemon.
- Nose: elements and soft vanilla oak notes.
- Mouth: flavors of tropical fruit, mineral palate with notes of grapefruit and pome fruit.
APPELLATION: Stellenbosch.
GRAPES: 100% Chenin Blanc.
PREPARATION: The grapes are harvested decomposed granite soil and vineyards ranging in age but under 30 years and up to 43 years. the grapes are allowed a short skin contact and a natural settlement in the tank. 16% is fermented in French oak barrels of third and fourth filler and 84% stainless steel, after which both portions are maintained 5 months in the fermentation lees before mixing and grinding. Fermentation is a slow natural process and wild yeast ferments as this may take up to three months to complete.
PAIRING: dishes like smoked chicken salad on a warm summer day or thinly sliced carpaccio served on a bed of arugula with olive oil, lemon and black pepper dressing.
