Spier Cabernet Sauvignon Signature 2018 (Cabernet Sauvignon)
- Colour: Spier Cabernet Sauvignon Signature 2018 has a dark plum colour with purple reflections.
- Nose: strong aromas of red fruits and a light aroma of spices.
- Mouth: Rich in the mouth, with flavours of ripe fruit, cherries and oak spices.
DESIGNATION OF ORIGIN: Stellenbosch
VINEYARD: Spier. Located in the Western Cape region of South Africa, this vineyard has over 300 years of experience and a legacy in the art of winemaking. The focus of the estate is on maintaining good practices while preserving the quality of the wines.
GRAPES: 100% Cabernet Sauvignon
AGEING: Eight to ten months of maturation, divided into French oak barrels and stainless steel tanks.
PREPARATION: The grapes are harvested and destemmed, before a gentle crushing and cooling take place. This stage lasts two days. The juice is fermented in stainless steel tanks at a controlled temperature of 24 °C until it is completely dry, including regular pumping over three times a day. The wine is then divided, 20% of the production goes into French oak barrels, and the rest into stainless steel tanks to complete the maturation. Finally, the liquor is blended and bottled for consumption.
WINE MATCHING: This red wine goes perfectly with beef, lamb, venison and mature cheeses.
