- Nose: Dark fruits, plums, and raspberries satisfy the senses in a rich aroma that, while deep, is inviting.
- Mouth: Soft velvet and smooth tannin give the Cabernet a standard taste that makes it welcoming to wine drinkers of all varieties. Red fruits and gentle spice add to the texture of this palate. A long finish that slowly smooths away to dry tannin is the most noted quality of the wine.
VINEYARD: Kleine Zalze, a vineyard resting within the sunny wine valleys of the Coastal Region of South Africa. The Stellenbosch region is famous for its excellent craft of award-winning wines in South Africa. Internationally recognized as the most prosperous wine country in South Africa, Stellenbosch mostly harvests Cabernet Sauvignons. The gentle slopes, apple sunshine, and clay-concentrated soil make for ideal growth of red grape varieties in particular.
GRAPES: 100% Cabernet Sauvignon.
AGEING: Aged in French oak barrels for 12 months.
PREPARATION: The grapes are picked early in the morning. Half are sent to undergo a traditional fermentation in open fermenters while the other half are set in stainless steel tanks. Oxygen is added to the wine. Tannins are extracted and re-infused to give the wine its smooth finish. Afterwards, gravity separates the skin from the fermented wine. Malolactic fermentation occurs in stainless steel tanks.
PAIRING: Best served with a steak dinner or lamb and red sauce. Garlic buttered potatoes and charred vegetables will serve as an excellent addition.
