The cool climate and south-facing slopes make for ideal growing conditions comparable to French vineyards. The Sauvignon Blanc varieties are grown in the vineyard's highest section, which rests at approximately 200 meters above sea level. Since Sauvignon Blanc grapes are relatively scarce compared to consumer demand, Journeys End Weather Station Sauvignon Blanc also includes grapes sourced from other reputable local vineyards.GRAPES: Sauvignon Blanc
AGEING: Aged in steel tanks for 4 months with lees stirring once weeklyPREPARATION: In a typical year, fewer than 25,000 bottles come from Journey's End, so the emphasis is on quality over quantity. The grapes for Journeys End Weather Station Sauvignon Blanc were handpicked early in the morning to maintain subtle fruit flavours. The bunches were hand sorted and destemmed before being carefully crushed. The grapes then undertake 8 hours of skin contact and before the juice is settled using enzymes. The fermentation lasted up to 40 days in tanks temperature-controlled to 13ºC maximum.
