Demorgenzon Dmz Chenin 2015 (Chenin)
- View:  has a clear green colour with yellow highlights.
- Nose: Fresh on the nose, with notes of green apple, apricot, peach, a hint of honey, and some floral scents.
- Mouth: Rich and well-balanced palate, with a fruity and crisp taste. Long and persistent aftertaste.
VINEYARD: DeMorgenzon. Located in the Coastal region of the Western Cape in South Africa. The grapes for this particular harvest were picked slightly overripe to allow for the acidity that marked the year of 2015 to drop before collecting the fruit. The interesting weather and conditions for year lead to wines with full body and full of character.
GRAPES: 100% Chenin Blanc.
AGEING: Four to six months in stainless steel vats and oak barrels prior to bottling.
PREPARATION: The grape is harvested and precooled, before being lightly pressed as preparation. Three separate batches are selected, free run, medium press, and hard press. Each batch is allowed to settle overnight, and left with a combination of natural yeasts to facilitate fermentation. Ageing takes place also separately, in a combination of stainless steel tanks and oak barrels. Finally, the blending process takes place, followed by lightly filtering and bottling.
PAIRING: Perfect to accompany certain types of cheese, such as cheddar and gruyere.
RECOMMENDED SERVING TEMPERATURE: 10-13°C
