In Soave we find the controlled denomination of origin of the same name, Soave DOC, located just outside the town of Soave in the province of Verona. This is a DOC that produces its wines from varieties of Garganega, plus Trebbiano Toscano and Trebbiano di Soave.
The wines from the Soave DOC have 10.5º of alcohol, but they become Superior wines when that content reaches 11.5° and after aging for at least 8 months. The wine produced in the oldest region of the DOC is called Classico, but varieties of Spumante Naturale and Liquorous wine are also made.
The main grape of this Soave DOC is the Garganega. It is found in all areas of the Veronese, the Vincentian and the Colli Euganei, in the provinces of Padua, Verona and Vicenza. In Italy it can be called Garganega di Cambellara, Oro and d'Oro, all of them being synonyms for the same grape.
