VINEYARD: The Osborne winery in Puerto de Santa María produces Osborne Pedro Ximenez 1827 with Pedro Ximénez grapes grown in Andalusia, southwest of Spain. The soil, called "Albariza, has the property of retaining little rainwater, and allows a deep rooting of the stocks. The climate is warm, influenced by the western currents that, in summer, blow from the near Atlantic, constantly bringing the necessary humidity.
GRAPES: 100% Pedro Ximénez.
AGING: Long-lived wine, several years in the cellar.
PREPARATION: For the preparation of this wine, after the harvest the grapes are exposed to the sun and left to dry. Then they are gently squeezed and the must can begin the fermentation process in a steel tank at a temperature of about 24 ° C. After reaching an alcohol content of 11, 12 °, alcohol is added.Thus a "fortified" wine is obtained which is poured into 500 liter American oak barrels, where it begins to age for at least 6 years, with constant racking, according to the "solera" method. The winery's climate favors the perfect oxidation of the wine that transforms Osborne Pedro Ximenez 1827 into a delicious sherry.
