Lustau Sherry Solera Pedro Ximenez San Emilio (Pedro Ximénez)
TASTING NOTES:
- View: Golden color with hints of iodine.
- Nose: aromas reminiscent of figs, raisins and dates.
- Mouth: greatly sweet, velvety and smooth on the palate, well balanced with a long finish.
APPELLATION: San Emilio DOC.
VINEYARD: Bodegas Lustau.
GRAPES: 100% Pedro Ximenez.
AGEING: 12 years in barrels.
PREPARATION: Pedro Ximenez grapes exposed to the sun after harvest until they are practically raisins. After that, fermentation begins slowly and stops to keep all natural sugars. The resulting wine is aged for 12 years in contact with air at Jerez de la Frontera.
WINE PAIRING: Serve with rich desserts and pastries, or pour over vanilla ice cream. Perfect partner for strong blue cheeses. Ideal as a digestive.
RECOMMENDED SERVING TEMPERATURE: 8-10 ° C

The Winery
Lustau

Emilio Lustau S.A. was founded in 1896 by Don José Ruiz-Berdejo. It was a humble beginning: Don José, a secretary in the courts of justice, used to cultivate the vineyards at his estate "Nuestra Señora de la Esperanza", where he stored and aged the wines and afterwards sold them to the larger exporting companies. He was in fact what is known as an "almacenista".
