The González Byass family has been active in the production of quality wines since 1855 and has remained buoyant in the industry thanks to quality wines such as Leonor Palo Cortado . This is a monovarietal of fine Palomino that ages, on average, for 12 years in American oak barrels.
The maturation of the Leonor Palo Cortado occurs after a careful fortification process and the Soleras system that is characteristic of these wineries is followed. During aging, the wine is exposed to the air, which allows full oxidation.
At the end of this arduous process you get a powerful, intense and balanced wine.
Description of Leonor Palo Cortado
Leonor Palo Cortado (Palomino Fino)
- View: The Leonor Palo Cortado is amber with golden hues.
- Nose: Intense nuts (especially toasted almonds and hazelnuts) accompanied by woodsy notes.
- Mouth: Intense and persistent. Aftertaste long and balanced.
VINEYARD: González Byass. The winery has a special place in the heart of the city of Jerez (Andalucía) and has 1,844 hectares of vineyards throughout Spain. The wine comes from vineyards Payments Carrascal and Macharnudo. The climate is characterized by warm summers and springs with days while autumn and winter are generally mild. The land where the vines grow chalky soil are composed by contributing to the wine depth, measured structure, body and good balance.
GRAPES: Palomino Fino 100%
AGEING: Aged 12 years in American oak casks according to the solera system.
PREPARATION: The harvest is done manually. Once the palomino grapes reach the winery you are pressed gently. The must obtained from the first pressing is called "run juice" and is considered the most elegant and delicate. After fermentation and sorting, wine fortifies 18% and enters the hearth for aging. The wine is aged in permanent contact with the air to get a complete oxidation.
WINE PAIRING: Serve very cold. Also it perfect with white meats, fish and goat cheeses.
