Chateau Filhot produces wines of great character, that with proper aging develop unpublished notes in the same category. The creation of the vineyard is dated between 1630 and 1650. The castle was built in 1709 by Romain de Filhot (1641-1710), whose family already owned the noble house 'Verdoulet' in Sauternes. It was simultaneously replaced the old label 'Wine of Langon' with the introduction of the Sauternes appellation. In 1840, Romain-Bertrand de Lur-Saluces joined the vineyards of Chateau Filhot and Pineau du Rey in 1845 and rebuilt the castle in collaboration with the Architect Poitevin. The landscape architect Fisher contributed to the development of the large garden surrounding the castle. The vineyard was further expanded in 1970. The Château Filhot is a classic Sauternes where the freshness of the Sauvignon Blanc improves the character. Harvested by hand with successive passages through the vineyards. Fermentation in stainless steel tanks at controlled temperatures 50hl. 2 years aging in barrels and vats, bottling from 20 to 24 months after fermentation. If properly maintained can last several decades. amber color very rich. Toni saline and iodine, has rich mouth woodsy sensations and roasted, and a long finish.

The truth is that we made the wrong pairing. The best company for Château Filhot is a good conversation.
Nice and pretty colour. I left the bottle opened for a couple of days and got spoiled.
