Château d'Yquem 375ml 2007

2007 is a year that is part of law among those who wrote the legendary Château d'Yquem. The Noble Mold grows late, between late September and early October, but its development is complete (which is rare), just like the 1997. Beyond the particular climatic conditions eventful this vintage, Château d 'Yquem 2007 triumphs standing out as one of the greatest vintages of Sauternes. The color shines with a glittering gold. The nose shows intense romatica purity, which is the prerogative of Yquem style. The olfactory bouquet made up of many nuances, opens on the concentration of exotic fruits, then give way to the greed of honey notes. Next are the refreshing notes of citrus, such as grapefruit and lemon. On the palate, the wine is vibrating energy and bursts of flavors, revealing a mouth the precise plot and ending. Example of harmony, the balance between sweetness, acidity and alcohol, has a fullness worthy of the greatest Sauternes.

I bought it because it was recommended to me.
I noticed a dull colour. The texture was rough.

Château d'Yquem is a wine "Premier Cru Supérieur" produced in Sauternes, a region that is located in the south of Bordeaux. In the official classification of Bordeaux wines of 1855, Château d'Yquem was the only Sauternes to have this qualification. The grapes are harvested in the same way in Chateau d'Yquem for centuries. At harvest time, 140 people divided into four groups involved in the collection. Scour the entire vineyard in search of cibebas who have reached the highest sugar concentration. As soon as they are harvested, the grapes are then transported quickly in the cellar, where they are pressed several times. This is essential to completely extract the substances contained nell'acino. Alcoholic fermentation occurs naturally and lasts for about 3-4 weeks at the end of which the wine will have a sugar content of about 125 g / l. After fermentation the wine is ready for a period of aging in new barrels. Every three months, the wine is separated from the dregs from the bottom of the barrel. The wine finishes the aging in oak barrels and is bottled in the fourth spring after the harvest. Intense golden yellow color; the bouquet is incredibly fine, with hints of dried fruit (dried apricots, prunes, cooked fruit and jam), spices (cinnamon, saffron and liquorice), and even the flowers (lime blossom, etc.). The first impression of Chateau d'Yquem is always very silky on the palate, and often sumptuous. completely envelops the palate. This wine has a strong character, but never intrusive, with great elegance. It always keeps in balance between sugars and acidity (sweetness and freshness). A touch of bitterness may also contribute to the harmony general. In addition to traditional combinations such as foie gras and blue cheeses, it blends wonderfully with seafood and shellfish and, similarly, is the fabulous wedding with some fish, such as turbot and sea bass. Serve at 6 ° - 8 ° C

Château d'Yquem 375ml 2003
Discovering Chateau d'Yquem stats with the bouquet. Although not always very outgoing in young vintages, it is marked by fruit (apricot, mandarin, and occasionally tropical fruit) and oak (vanila and toasty aromas). Older vintages, on the other hand, have extraordinarily complex fragrance as soon as the bottle is opened. The bouquet is amazingly suble, with hints of dried fruit (dried apricot, prune, stewed fruit, and marmalade), spice (cinnamom, saffron, and liquorice), and even flowers (linden blossom, etc).
The first impression of Chateau d'Yquem on the palate is always very silky, and often sumptuous. It then fills out, "coating the palate". This fine wine has a strong, but never overbearing character, with great elegance and poise. It always mantains a balance between sugar and acidity (sweetness and freshness). A touch of bitterness can also contribute to the overall harmony. Chateau d'Yquem aftertaste is legendary, and it tells another story, which lasts and lasts...
