APPELLATION: Santorini

VINEYARD: The Thalassitis 2018 is produced by the winery Gaia Santorini Assyrtiko grapes, native variety of grape, DOP Santorini, Greece. All vineyards are located in the territories of Pyrgos, Episkopi and Akrotiri, and vines can reach 80 years of age, with a fairly low yield no more than 25 hectoliters per hectare. Although climatic conditions with higher temperatures throughout the year, the soil gives a very acid grapes.

GRAPES: 100% Assyrtiko.

Aging: This wine can be aged for a few years in the cellar.

PREPARATION: Harvest Agostini, for Assyrtiko grapes, early ripening sun. Harvesting is done manually, with careful selection of the best grapes, which are put in the cellar to be de-stemmed and then squeezed. The method of vinification is the traditional white, with separation of the must from the skins and the beginning of the fermentation in steel tanks at controlled temperature. After a while aging in barrels, after which the wine can be bottled and marketed.

PAIRING: Combines perfectly with seafood appetizers, fish, crustaceans and molluscs.

RECOMMENDED TEMPERATURE SERVICE: 10-12 ° C.

- In Antiquity, mixing wine with sea (Thalassa in Greek) water was a very well known practice applied to give therapeutic virtues to wine. The wines resulting from this process were called Thalassitis Oenos (sea-originated wine). Without mixing, obviously, our wine with seawater, we strongly believe that the proximity of Santorini's vineyard to the Aegean Sea is one of the most important factors forming the special character of our Thalassitis.
- Thalassitis is produced from Santorini's indigenous white grape variety, Assyrtiko. Perhaps, it is the only variety in the Mediterranean that manages to combine full maturity of grapes with considerably high acidity, despite the specific climatic conditions of the Island. This fact is an essential factor for accomplishing flavour balance in dry white wines.
- All the Assyrtiko grapes selected for Thalassitis originates exclusively from our vineyards in Episkopi, Akrotiri and Pyrgos regions. The vines are almost 80 years old and have a particularly low-yield that never exceeds 25 hl/ha.
- Thalassitis is a bone-dry wine with strong character: full-bodied, well-structured with crisp acidity, distinctive minerality and delicate honeysuckle aromas. Enjoy it at 10oC with seafood, fish, shellfish or even lamb stewed in lemon sauce. Try cellaring Thalassitis for 2 to 3 years at a temperature no higher than 12 to 14C and you will witness a change in it. Its mineral dimension will subside while the fruity and honey aromas will expand.
- Don't forget to pour Thalassitis into a wide decanter half an hour before serving. You will definitely be pleased by the result!

Pale yellow color with hints of lemon, iodine aromas, citrus, butter and mineral notes, both on the nose and the mouth, where the acidity predominates. Cool, with good volume and flavor.
