VINES: The winery Gaia Santorini produces Gaia Wines Wild Ferment Assyrtiko 2018 with grapes vine Pyrgos, vine native Assyrtiko. Stretches of vineyards along the coast of the island of Santorini, Greece, raised according to the old method called "Kouloura", or in the form of a basket, a practice that dates back more than 3,000 years ago. PREPARATION: Assyrtiko grapes are harvested in August and immediately taken to the winery to begin the process of winemaking. After pressing, the must is allowed for approximately 10 hours of contact with the skins, in stainless steel 1,000 liter, producing a fermentation temperature of 10 ° C. It follows an aging time in small barrels 225 liter acacia wood. Finally the wine is bottled and sold. It is recommended to aerate before drinking.
