VINES: The winery Gaia Santorini produces Gaia Wines Wild Ferment Assyrtiko 2018 with grapes vine Pyrgos, vine native Assyrtiko. Stretches of vineyards along the coast of the island of Santorini, Greece, raised according to the old method called "Kouloura", or in the form of a basket, a practice that dates back more than 3,000 years ago. The soil is porous, volcanic dry. The climate in the whole island is warm all year round, which favors early ripening of the grapes.

GRAPES: 100% Assyrtiko

AGEING: This wine can age a few years in a cool cellar.

PREPARATION: Assyrtiko grapes are harvested in August and immediately taken to the winery to begin the process of winemaking. After pressing, the must is allowed for approximately 10 hours of contact with the skins, in stainless steel 1,000 liter, producing a fermentation temperature of 10 ° C. It follows an aging time in small barrels 225 liter acacia wood. Finally the wine is bottled and sold. It is recommended to aerate before drinking.

PAIRING: Ideal with grilled fish, goat cheese and white meat.

Toasty, smoky and funky on the nose with mineral dusting and brooding intensity. The palate is salty dry with laser-beam precision and very funky wild ferment layering of complexity with oak wreathed into the mix with sensitivity. The finish is dry, with lasting salty and tangy flavours. Unique and outstanding wine.

- This wine has slight citrus aromas well-combined with elegant oak notes, a rich mouth fell, crispy acidity, intense mineral flavours and a long finish.
- Enjoy this wine with seafood, fatty fish, lamb and poultry at 8 to 10 degrees centigrade. Keep the wine for 2-3 years under proper cellar conditions and it will undergo profound changes. Its mineral dimension will subside while the fruity and honey flavours will envelop its body. Pour Assyrtiko by Gaia-Wild Ferment in a wide decanter for around half an hour before enjoying it.
