Pascal Jolivet's Sancerre Sauvage 2014 is the only red wine of the domain matured in barrels. The name "Sauvage" refers to the completely natural fermentation without the addition of yeasts.
This French wine is produced with the Pinot Noir grape variety and offers aromas of ripe red fruits with light spicy notes. On the palate, it offers a good balance between the concentration of aromas and a persistent finish.
The Maison Pascal Jolivet winery was founded in 1987 and specialises in Sancerre and Pouilly-Fumé wines. Pascal Jolivet's wines are famous all over the world and have won many international awards.

Pascal Jolivet Sancerre Rouge Sauvage 2014 (Pinot Noir)

VINEYARD: The grapes come from a selection of old Pinot Noir vines, planted in 1952 on mineral-rich clay-limestone soils, located in the commune of Bué on a surface area of 1 ha.

AGING: Vinification and maturation in demi-muids for 15 months, no filtration before bottling.
