Pascal Jolivet Sancerre Blanc 375ml 2018 (Sauvignon Blanc)
- View: Pale yellow, bright green tones.
- Nose: aromatic bouquet, very fresh and clean, light notes of wildflowers and grasses.
- Mouth: fresh, clean taste, very dry, elegant, particularly youth, subtle acidity and residual sugar content.
APPELLATION: Sancerre.VINEYARD: Three vineyards of Sancerre with different soil types: Vineyard Le Kallote with very calcareous soils, 50% Sauvignon Blanc in the mix, vineyard Le Terre Blanche with calcareous clay soils, broken in the highest part of the hill, with a 30% mixture of Sauvignon Blanc, Vineyard Silex, exposure east and ground lime and silica, 20% of the mixture of Sauvignon Blanc.GRAPES: Sauvignon Blanc 100%.
AGEING: aging on lees, made in steel tanks, after which, final blend composed of three Sauvignon Blanc.PREPARATION: minimal interference in the vinification process, grapes harvested by hand and gently pressed. Naturally fermented must in crops natural yeast at a controlled temperature. The highlight is that each vineyard grapes are fermented separately. Thanks to these characteristics, the individual characteristics of each terroir are fully manifested.

The normal colour, deep yellow. Perfume of white flowers: jasmine, lilies .... A very light taste.
