- Nose: Aromas of apricot, green apple, and lemon curd, underpinned by minerality and a whiff of seaside salinity.
- Mouth: Somehow both complex and easy to drink, a Sancerre unlike any other as so expressive of its special terroir. Round, open notes, and vibrant acidity with a persistent finish. Honeycombed but restrained fruit battling oyster shells on wet flints, and both winning.
VINEYARD: Domaine Gérard Boulay. Boulay began farming the Mont Damnés vineyard in 1982, a steeply-sloped south-facing plot of terre blanche soils providing minerality and structure to the wines. Antique records suggest that his ancestor Jean Boulay farmed the same vineyards in Chavignol which Boulay works today. All vines are worked and harvested by hand. Boulay's mission is to express not the grape itself but the terroir in which it thrives.
GRAPES: Sauvignon Blanc
AGEING: 10 months on the lees in a combination of 330 liter barriques (at least three years old, never new wood), and stainless steel tanks.
PREPARATION: Organic methods used throughout. Natural fermentation with no manipulation or added yeast. Bottled unfiltered just before the following harvest, allowing wines to spend as long on their lees as possible.
PAIRING: Ideal as an aperitif, but also suits white meats, fish, seafood, vegetarian food, and spicy food. Perfect with goat cheeses.
RECOMMENDED SERVING TEMPERATURE: 10-12°C
