VINEYARD: Tenute Rubino. This winery was founded by Tommaso Rubino in the 1980s in hopes of showing the world the true potential of the Salento region. In 1999, Tommaso's son and his wife created the Tenute Rubino brand, adding many innovations to the business. The winery is best known for its use of Susumaniello, a black grape whose production decreases harvest by harvest, which is not ideal in a market where most winemakers aim to maximize their production. For that reason alone, Tenute Rubino is a winery to keep an eye out for, to try this underappreciated grape and enjoy what it has to offer.
AGEING: After being left to age in stainless steel tanks for 10 months, the wine is bottle-aged for two additional months.
PREPARATION: The grapes were handpicked at the beginning of October before undergoing ten days of controlled maceration. After fermentation, the wine was aged for a total of one year.
PAIRING: This fine red wine marries well with vegetable-based savoury dishes with aubergine, tomato, and mushrooms. It also pairs well with semi-cured cheese, cold cuts, and grilled meat.
