Bats are a symbol of good health, happiness and family ties, according to an ancient Spanish legend. One day the wife of the company founder, Doña Amelia, found a bat colony under the roof of the distillery and interpreted this as a good omen for the company. So she suggested using this animal as the Bacardi logo. This is why there is a bat on every bottle of Bacardi.
From his support for the struggle for Cuban independence obtained in 1902 to his forced departure to Puerto Rico in 1959, the historical saga of the Bacardí family is well known. Its manufacturing secrets are less well known. Starting with the nature of the yeast strain that Facundo Bacardí Masso and José Bouteiller isolated in 1862 to distil their first rum in Santiago de Cuba. It would still be used today in the confidential recipe used to make Bacardi Carta Blanca, this classic white rum in bars and clubs. It is appreciated for not colouring blends and cocktails. It remains the brand's flagship product.
Bacardi has gone from a traditional manufacturing method to a process of industrialization, the only one capable of meeting the ever-increasing international demand. The old 1862 still was replaced in 1911 by a double Coffey type column, which was replaced in 1958 by multiple columns still. Bacardi Carta Blanca is a blend of rums made from molasses, aged for 1 to 2 years in casks. It is filtered with activated carbon to recover its crystalline colour. Apart from the sugar, the other additions remain secret. It tastes at 37.5 °C. It is a light and dry rum, with scents of anis, caramel and grey pepper. Its 1l bottle is essentially used in mixology, which remains its primary vocation, recognised by barmen all over the world.

Create in 1862, the Bacardi Rum is the original rum, perfect for cocktails and light. Ageing is 2 years in carefully selected oak. Following his ageing process, rums are blended and passed through the carbon filter to obtain transparency.
