“Biondi Santi Rosso di Montalcino is a wine produced by the famous Winery Biondi Santi in Montalcino in Tuscany from Sangiovese grapes. The vineyards in which the Sangiovese is cultivated for the production of Biondi Santi Rosso di Montalcino are various origins, rich in skeleton. The best are rich in galestro, a typical Tuscan stone wich is especially present in Montalcino. The grapes are harvested around the beginning of September and brought to the winery for pressing, fermentation takes place in stainless steel tanks at controlled temperature and periodical pumped-over and delestage are performed during maceration to extract the responsible compounds of color, texture and perfumes from the skins. Biondi Santi Rosso di Montalcino is separated from the skins and placed in aging for 12 months in Slavonian oak barrels for 12 months before blending and bottling.”
“I'd like to try it with a carpaccio. I went with work colleagues to Biondi Santi Tenuta Greppo and we tried it there.
Good cherry colour, and middle layer. Good scents of red fruits of this Biondi Santi Rosso Di Montalcino. The texture is watery.”
