VINEYARD: Umberto Cesari, named for the man himself, dedicated to local grape varieties in Romagna since the early 1960s. Over time he became an ambassador of Sangiovese to the world. The subtitle of the producer's name is ‘Wine, Land, and Soul', as it believes itself to be simply the guardian of its environment, and that each and every wine has a unique soul created from the fusion of experience, technique, and fate.
AGEING: 24 months in 30 hectolitre barrels made from Italian and Slavonian oak.
PREPARATION: The grapes, grown on hillsides in medium-density clay, were selected with care at peak maturity level. Temperature-controlled fermentation with regular cap punch-down in vertical steel vinification tanks, and a lengthy maceration.
PAIRING: Red and roasted meats and game, vintage cheeses, or rich desserts. You might enjoy it with Roasted Lamb Neck with Baked Squash and Capers.
RECOMMENDED SERVING TEMPERATURE: 16-18°C
